Low Carb Cauliflower Mac and Cheese

Ingredients

Instructions

  • Wash and cut 2 heads of cauliflower. Place them in boiling water for 15 minutes then turn off the heat and leave them in the water for 20 minutes.
  • Place them in a large bowl and dump the excess water. Let it cool and use your hands to break them into smaller bite size pieces.
  • Preheat the oven to 350F.
  • In a small sauce-pan on medium heat
  • melt 2 tablespoons of unsalted butter. Add 1 cup of heavy cream and combine. Let it simmer and just before boiling add ½ cup of sharp cheddar cheese and 2 cups of shredded mexican blend. Mix until all is melted and well combined.
  • Add 2 teaspoons of salt ½ tsp of black pepper 2 tsp of garlic powder and 2 tsp of onion powder. Mix it well.
  • Add the cauliflower to a baking dish and pour over the cheese sauce. Mix it well then add more Mexican cheese blend on top.
  • Bake for 35-40 minutes. Enjoy!
