  • ROASTED CHICKEN:
  • Sprinkle your bird completely in salt including the cavity.
  • Place onto a sheet pan and into an oven that’s been set to 450°F for 50-60 minutes or until an internal temp of 170°F has been reached on the thigh
  • near the bone.
  • Let rest for 10 minutes and serve
  • HALF CHICKEN:
  • Grab a whole chicken and remove the spine. Cut the bird in half and sprinkle both sides with your seasoning. Place into a refrigerator for ~2 hours to let dry brine.
  • Remove from the fridge and place into an oven set to 400°F for 35-40 minutes or until the thigh has reached an internal temp of 170°F near the bone.
  • Let rest for 5-10 minutes and serve
  • 4-Piece Family Meal:
  • Take your bird and cut it into sections. Season generously with salt.
  • Place an oven-safe pan over high heat for about 2-3 minutes before placing your chicken pieces on skin side down. Let cook on this side for 3 minutes before flipping.
  • Once the chicken has been flipped add in your butter and rosemary. Baste each piece of chicken with the melted butter for about 1 minute before placing into an oven set to 350°F for 15-20 minutes or until the thigh reads an internal temperature of 170°F at the bone.
  • Serve hot.
